The breakfast and lunch franchise brand The Big Biscuit is strengthening its Midwest presence with a new restaurant planned in Manhattan, Kansas, as the company continues its steady regional expansion.
The upcoming location will be developed as a corporate-operated restaurant at 622 Tuttle Creek Boulevard in Manhattan and is expected to open in mid to late summer 2026. The project will be led by company president and CEO Chad Offerdahl along with vice president of operations Scott Jayne.
The Manhattan opening forms part of the brand’s strategy to expand across Kansas and neighbouring Midwestern markets while maintaining its community-focused approach to dining. The concept has built its reputation on classic American breakfast and lunch dishes served in a family-friendly environment with what the company calls “hometown hospitality.”
Founded in 2000 in Independence, Missouri, The Big Biscuit began as a single neighbourhood restaurant before being acquired in 2010 by Chad Offerdahl and his father, David Offerdahl. Since then, the brand has steadily expanded through a mix of corporate and franchise locations.
Presently, the chain operates around 30 restaurants across Kansas, Missouri, Oklahoma, and Arkansas, positioning itself as a growing regional player in the breakfast and lunch segment.
The menu features traditional American comfort food including buttermilk biscuits, biscuits and gravy, pancakes, omelettes, chicken and waffles, and burgers, with restaurants typically operating during daytime hours from early morning to mid-afternoon.
The new Manhattan restaurant is expected to strengthen the brand’s presence in Kansas while supporting its broader growth plans across the Midwest as demand rises for casual breakfast-focused dining concepts.
