Mac Haik Restaurant Group has signed a 36-unit franchise agreement with fast-casual chicken brand Starbird, marking the largest development deal in the company’s history. The Houston-based operator will develop the locations across Texas, including Houston, Austin and San Antonio, with the first openings expected in 2027.
The agreement marks Starbird’s entry into Texas and a significant step in its expansion beyond its West Coast base. Founded in 2016 in San Francisco, the brand currently operates around 19 locations across California and Colorado and is increasingly leaning on franchising to scale nationally.
Greg Levin, Chief Executive Officer of Starbird, said in the company’s announcement: “Texas is a dynamic and high-growth market, and we are excited to partner with an experienced operator like Mac Haik Restaurant Group to introduce Starbird to new guests.” He added that the deal reflects the brand’s focus on expanding with partners who can deliver operational excellence at scale.
Dan Anfinson, Chief Operating Officer at Mac Haik Restaurant Group, said: “We are always looking for brands that bring something differentiated to the market, and Starbird’s fresh, chef-driven approach to chicken strongly aligns with our growth strategy.” He added that the group sees long-term potential in the brand as it expands into Texas.
Mac Haik Restaurant Group, part of Mac Haik Enterprises, operates a portfolio of restaurant concepts across Texas and brings multi-unit experience to the partnership. The company said the collaboration is part of its broader plan to invest in high-growth fast-casual brands.
The deal comes as competition intensifies in the U.S. chicken segment, particularly within the premium fast-casual category. With a 36-unit pipeline secured in Texas, Starbird gains immediate scale in a key market and strengthens its position as it builds out its national franchise network.
