The deal will see Mex Midwest introduce three new locations of the Iowa-born fast-casual concept, known for its burritos, fresh-pressed tortillas, and made-to-order menu. While specific sites have not been publicly disclosed, the development is expected to focus on high-traffic suburban corridors and university-driven trade areas, segments where Pancheros has historically performed strongly.
Founded in 1992, Pancheros has steadily expanded its footprint across more than a dozen states, positioning itself as a differentiated player in the competitive Mexican fast-casual category. The brand’s emphasis on fresh dough tortillas pressed in front of customers, alongside its proprietary “Bob the Tool” burrito mixing method, continues to be central to its identity and franchise appeal.
The agreement with Mex Midwest reflects a broader strategy by Pancheros to scale through experienced multi-unit operators rather than single-store franchisees. For Mex Midwest, the partnership signals a deeper bet on the resilience of the fast-casual dining segment, particularly in markets where value, speed, and customization remain key consumer drivers.
